In the treatment of fresh meat (esp. for maturation and preservation of fresh beef, port, veal, lamb, game, poultry, fish, raw sausage and ham) and plants (e.g. flowers, vegetables and lettuce) by temporarily holding in an airtight space contg. a gas atmos. different from the ambient atmos.. The process is improved in that an oxygen atmos. of above atmos. pressure is created and maintained in the airtight space throughout the entire treatment.
