摘要 PROBLEM TO BE SOLVED: To provide a quickly boilable spaghetti whose heating can be ended in the state of al dente, whose boiling time can be shortened to a half, whose boiled cross section has the same circular shape as that of a conventional spaghetti, and which gives a good texture (al dente) slightly having a half-boiled portion and permits the easy adhesion of a sauce when cooked or eaten. SOLUTION: This quickly boilable spaghetti on which grooves for imparting functions are formed in the longitudinal direction of the noodle filament. The functions comprises that the spaghetti can quickly be boiled in a good texture state slightly leaving a half-boiled portion, and that the cross section of the boiled spaghetti has an approximately circular shape. The spaghetti has the four grooves at equal distances in the longitudinal direction of the noodle filament, and the depth of each groove is 20 to 30% based on the diameter of the cross section vertical to the longitudinal direction of the noodle filament. The cross-sectional shape of the projected portion projected by forming the grooves is an approximately sector having its pivot on the central portion of the spaghetti.
