PROBLEM TO BE SOLVED: To provide a careful and simultaneously economical and large-scale method for production by which a high-quality coffee extract capable of providing a coffee comparable to a just prepared coffee in quality can be produced and to obtain the high-quality coffee produced by the method. SOLUTION: This method for producing a plant extract is to extraction-treat a pulverized roasted coffee with cold water and comprises (a) a step for suspending the roasted coffee pulverized to about 0.2-2 mm particle diameter in cold water, extracting a soluble component, then separating the aqueous extract from a solid component and collecting the resultant aqueous extract and (b) a step for further subjecting the solid component from the step (a) to pulverization in cold water, providing 50-200μm average particle diameter, extracting a soluble component, subsequently separating the aqueous phase from the solid component and collecting the aqueous phase. |
