摘要 <p>The invention relates to the food industry and more particularly to the manufacturing of puffed grain products in the form of porous sticks made from the bran of cereals. The inventive method consists in using grain bran for the extrusion, whereby said grain bran has an initial intrinsic moisture of no more than 12-13 % and in increasing the moisture thereof, directly before extrusion, to 14-15 %. The extruded product is maintained at a degree of 5-7 % humidity, with a rate of 100-180 m/min. The composition used for manufacturing the extruded product contains grain bran and taste enhancer and/or flavoring, the ratio of the components being the following, in weight %: grain bran 12-13 %: 95-99.8 %: taste enhancer and/or flavoring: the rest.</p>
