PROBLEM TO BE SOLVED: To efficiently concentrate and recover the subject polyphenols, for example, quercetin, myricetin, rythberatrol or the like that are effective for arteriosclerosis, cardiopathy, cancers, Alzheimer's disease by bringing yeast into contact with fruit juice or wine. SOLUTION: Concentrated red grape must is diluted four folds to prepare a juice of 20.2% sugar content and the yeast is added to the juice in an amount of 1,000 ppm and the fermentation is effected at 20 deg.C for 12 days to completely consume the sugar. After completion of the fermentation, the fermentation mixture is centrifuged to separate and collected the wet cell bodies. The resultant wet cell bodies are freeze-dried, 60% ethanol is added to the freeze-dried cell bodies and they are stirred with a stirrer at 20 deg.C for 20 hours whereby the polyphenol components adsorbed to the yeast is extracted.
