PROBLEM TO BE SOLVED: To obtain a topping material having an excellent normal-temperature shelf stability, simple handleability, a slight rough feeling reduced simply only by placing the topping material on bread, etc., and toasting, providing both moist palatability and simple palatability, hardly dropping and peeling, useful for a readily edible toast food and to provide a method for producing the topping material. SOLUTION: The whole raw material comprising trehalose and a flavor raw material is prepared in such a way that the water content in preparation of the whole raw material is 5-20% and the maximum amount of trehalose to be completely dissolved in the water at a fixed temperature of 50-100 deg.C is added to the raw material. The mixture is heated to the fixed temperature of 50-100 deg.C or higher than it, mixed, cooled to a normal temperature or lower than it, solidified and ground. Consequently a topping material for a readily edible toast food having a slight rough feeling after toasting, moist palatability and simple palatability, hardly dropping and peeling from the toast food is obtained. |
