PROBLEM TO BE SOLVED: To provide a new crystalline glucides complex including D-psicose and D-fructose, its production method and use. SOLUTION: This crystalline glucides complex includes D-psicose and D- fructose. The production method of the crystalline glucides complex produces and collects the crystalline glucides complex including D-psicose and D-fructose from a sugar solution including D-psicose and D-fructose. The preferable solvent for the sugar solution in producing the crystalline glucides complex is water or a mixture of water and ethanol.
