PROBLEM TO BE SOLVED: To provide a method for storing strawberry for jam by which the color or the like original to the strawberry is retained after preservation, the softened state and the texture after freezing and thawing are hardly reduced, and the strawberry can be preserved for a long period. SOLUTION: A raw strawberry is stored in an immersed state in a sugar solution made to have 30-80% sugar content at (-1)-(-5) deg.C. The weight ratio of the raw strawberry to the sugar solution is made to be (20:80)-(80:20). |
