摘要 PROBLEM TO BE SOLVED: To produce breads including fruits therein, having voluminousness, and an appearance such as having crust with stretch, and excellent in texture, internal phase and touch feeling by using a dough for the breads, having the fruits kneaded therewith and further having a pH regulated within a prescribed acidic region. SOLUTION: A dough for breads having fruits such as a prune, an orange and a raisin, preferably of 3-30 wt.%, kneaded therewith, and further having a pH regulated by using one or more kinds selected from a baking powder, bicarbonate of soda and a brine to 5.2-6.0 is used to provide the objective breads including the fruits. For example, the breads including the fruits is obtained by mixing 100 pts.wt. flour, 3 pts.wt. yeast, 0.1 wt.% yeast food, 0.2 pts.wt. bicarbonate of soda, 2 pts.wt. common salt, 5 pts.wt. sugar, 2 pts.wt. powdered milk and 65 pts.wt. water, kneading the obtained mixture, adding 20 pts.wt. prune paste to the kneaded product, preparing the dough, fermenting the obtained dough, and baking the fermented dough.
