PURPOSE: A manufacturing method of kimchi having chitosan and minerals is provided to improve the preservation period and productivity of kimchi by washing Korean cabbages with water having chitosan and minerals. CONSTITUTION: The method for manufacturing kimchi having chitosan and minerals comprises the following steps. Korean cabbages are cut and salted down. The salted cabbages are primarily washed with a solution having 0.01-0.05% of chitosan. The cabbages are secondarily washed with a dilution of minerals by removing tallow with crushing and dissolving animal bones, by precipitating and by filtering. The secondarily washed cabbages are dehydrated and seasoned with spices. The mixed cabbages with the spices are packed and ripened for a predetermined period. The chitosan solution contains 0.02% of edible chitosan dissolved in water.
