COUPLER-FREE HAM HAVING STORAGE STABILITY

PURPOSE: Coupler-free ham having storage stability is provided to keep the original scarlet of ham, prevent food poisoning and extend the expiration date by destroying microbes in the ham, and reduce the use of nitrite as a coupler. CONSTITUTION: The coupler-free ham contains 0-200ppm of nitrate or nitrite as a coupler. The meat for the ham is any edible livestock meat and poultry. The radiation for manufacturing the ham is γ-ray. The amount of an absorption ray of the radiation or an electron beam is in the range between 0.5 kGy and 10 kGy. The origin of the radiation is Co-60. A manufacturing method of the ham comprises the steps of: preparing seasoning solution with or without the coupler additive; injecting the solution and massaging; vacuum-packing the massaged meat; radiating the radiation or the electron beam to the vacuum-packed meat; and smoking, heating and cooling the radiated meat.
