PURPOSE: A fermentation control method is provided to achieve an optimum fermentation performance by employing an additional electric heater for fermentation. CONSTITUTION: A fermentation control method for a gas oven range having a fermentation heater arranged within an oven cavity, comprises a step(102) of judging whether a fermentation key is input or not, a step(104) of judging whether a predetermined time period has lapsed if it the fermentation key is input, a step(106) of alarming a user of the fact that the temperature of the oven cavity is high if a predetermined time period has not lapsed, a step(108) of turning on the heater installed within the oven cavity if it is judged in the step(104) that a predetermined time period has lapsed, a step(110) of judging whether heat is sensed at the oven burner, a step(112) of forcibly turning off the valve which controls the gas supply toward the oven burner if heat is sensed at the oven burner, a step(114) of judging whether sufficient time for fermentation has lapsed if heat is not sensed at the oven burner, ending the fermentation process if sufficient time has lapsed, and returning to the step(108) if sufficient time has not lapsed.
