Production of a non-animal protein bard substitute that resembles lard-based bards comprises: (a) mixing a homogenate of alginate, a chelating agent and water with vegetable flour and water; (b) adding vegetable oil and mixing, homogenizing and sifting the mixture; (c) mixing a gelling agent and water; and (d) molding, leaving to harden and slicing. The method comprises: (i) homogenizing alginate, its chelating agent and water; (ii) mixing vegetable flour with water; (iii) mixing the products of (i) and (ii); (iv) adding vegetable oil to product of (iii) and mixing, homogenizing and optionally sifting; (v) mixing a gelling agent of the alginate with water; (vi) adding product of (v) to that of (iv); and (vii) leaving the product of (vi) in a mold to harden and, if needed, cutting into strips. An Independent claim is also included for the substitute of bard free from animal protein and obtained using the claimed process. |
