SOLUTION: This method for producing fermented soybeans comprises fermenting soybeans in a stationary phase in a fermentation process and then continuing the fermentation process, while maintaining an air oxygen concentration within a low oxygen concentration range of 2 to 8% in a fermentation chamber.
