PROBLEM TO BE SOLVED: To obtain fermented soybeans which have an improved taste and an improved stringing property, simultaneously satisfy the control in the generation of ammonia smell and have a good quality, and to provide a method for producing the fermented soybeans. SOLUTION: This method for producing fermented soybeans comprises fermenting soybeans in a stationary phase in a fermentation process and then continuing the fermentation process, while maintaining an air oxygen concentration within a low oxygen concentration range of 2 to 8% in a fermentation chamber. |
