PROBLEM TO BE SOLVED: To provide a process for efficiently remove excess oil attached to a Tempura (Japanese deep-fried food) having high expansion ratio. SOLUTION: The dough of Tempura is fixed e.g. by sandwiching with nets after frying in an oil and the attached oil is removed by simultaneously or alternately blasting air heated above the room temperature and below 100 deg.C from both sides of the Tempura. |
