PROBLEM TO BE SOLVED: To obtain a safe and inexpensive new preservative for foods and beverages having high potency by actually adding it to foods and beverages. SOLUTION: This preservative for foods and beverages comprises an extract from cherry subjected to salt treatment or a combination of the cherry extract with a birch extract. In the case of the above combination, the cherry may not be treated with a salt. The cherry extract after subjected to the salt treatment has a strong antimicrobial activity and the combination of the cherry extract with the birch extract has a high synergistic antimicrobial effect by its small amount of addition.
