PROBLEM TO BE SOLVED: To obtain the subject new compound which has remarkably mild and mellow vanilla-like fragrance and flavor in comparison with known vanilla and so on of conventional perfume substances and is useful as an excellent and unique persistent agent for imparting or changing fragrance and flavor in the wide fields of luxury goods, drinks, foods, healthy materials, medicines, and so on. SOLUTION: A compound of formula I (R is a 1 to 4C alkyl), for example, 4-[4R*,5S*-(4,5-dimethyl-L3-dioxoran-2-yl)]-2-methoxyphenol. The compound of formula I is obtained, for example, by reacting (A) a compound of formula II (for example, vanillin) with (B) 2,3-butanediol of meso-isomer, dl-isomer or their mixture in an amount of about 1 to 2 mole times that of the component A in the presence of a catalyst of p-toluenesulfonic acid preferably at 50 to 150 deg.C for about 1 to 10 hr.
