PURPOSE: Method for preparing improved octopus bread is provided, which uses a mixed material of flour and baking powder in an ideal ratio instead of barley powder in the existing methods, and bakes the dough 2 times. Therefore the surface of the octopus bread is crisp and the inside is soft. CONSTITUTION: Method for preparing improved octopus bread comprises the following steps: (i) a first step to mix and knead flour, baking powder, water 10-15wt.%, milk 15-25wt.%, eggs 1-2wt.% and salt; (ii) a second step to put a part of the dough in a heated mold, and put boiled octopus 40-50wt.% cut in a regular size, Welsh onion 11-16wt.% and frying powder 2-5wt.% on it, and then bake firstly; and (iii) a third step to put the rest dough, sliced ginger 2-3wt.%, and green laver powder on the firstly-baked dough, and bake secondly with turning the dough and adding shortening oil.
