摘要 The present invention pertains to the field of gerontology, geriatrics and dietetics and can be used for estimating mainly food and cosmetic products from the point of view of biological and medical problems. The purpose of this invention is to maintain health conditions, to improve life quality and increases life duration and to preserve the beauty of the body. The method involves determining the fusion temperature of the analysed supramolecular structure of models from a whole series of studied products and determining a temperature reference value that is lower than the minimal fusion temperature of the analysed supramolecular structure of said models. The method further involves determining the value of a Gibbs' specific function for the formation of the supramolecular structure of said models according to the above-mentioned reference temperature value. The method finally involves selecting the reference model according to the minimal value of the Gibbs' specific function for the formation of the supramolecular structure, and comparing the values of the Gibbs' specific function for the formation of the analysed supramolecular structure both for the reference model and for the studied model by determining the relation between said values.
