PURPOSE: A process for producing tea of sugar-free fresh ginseng extract by a pressurizing-transfer is provided, thereby improving the taste and flavor of the fresh ginseng extract. CONSTITUTION: The process for producing tea of sugar-free fresh ginseng extract comprises the steps of: washing and selecting the fresh ginseng, and steam-sterilizing and maturing the fresh ginseng; cutting the ginseng into a size of 2 to 4 mm; drying the ginseng and carriers to have 10 to 15% of water content; mixing 30 to 70 wt.% of dried ginseng with 30 to 70 wt.% of carriers; pressurizing the mixture at 4 to 10 kg/cm¬2 and 150 to 500 rpm for 30 sec to 2 minutes to obtain the fresh ginseng-carrier mixture; drying the fresh ginseng-carrier mixture at 30 to 40 deg.C for 20 to 30 hours and cooling it at room temperature; and heating it at 4 to 15 kg/cm¬2 and 5 to 30 rpm for 10 to 20 minutes.
