The invention relates to a controller which is used to control the flow of brewer's wort from a clarifying vat, whereby said controller is a fuzzy controller. The invention also relates to a method for controlling the flow of brewer's' wort from a clarifying vat, comprising the following steps: a control valve and the height of a picking machine are adjusted according to the difference between a desired wort flow and an actual wort flow, whereby the control valve is opened further or the picking machine is lowered further if the desired wort flow is less than the actual wort flow and vice-versa; the desired wort flow is reduced if the actual wort flow is not to be increased by further opening of the control valve or lowering of the picking machine; the desired wort flow and height of the picking machine are adjusted according to the turbidity of the outflowing wort so that an increase in turbidity results in a less substantial lowering of the picking machine and a lower desired wort flow. |
