The invention relates to a process for preparing xylitol from an aqueous solution of xylose by fermenting the aqueous solution of xylose with a yeast strain which is able to convert free xylose into xylitol, and free hexoses which are present in the solution into ethanol, for a sufficiently long time to obtain a fermented solution which contains xylitol, and then by separating one or more xylitol-rich fractions from the fermentation solution by means of chromatographic separation.
