The invention relates to a food casing and more particularly to a breathable polymer food casing for the manufacture of meat products, such as dry sausages and cooked sausages and to a method for the manufacture thereof. Additionally, the invention relates to the use of a film or casing which is permeable to water vapour for dehydrating and/or maturing and/or smoking of meat products and more particularly to the use of films which are permeable to water and gases and which are continuous, that is to say which do not comprise perforations. The casing and/or film comprises thermoplastic polymer having polyether chains and with a moisture vapour transmission rate (MVTR) of equal or more than 150 g/m<2>/24 hours measured by the ASTM E96 BW method. |
