The composition comprises a pumpable liquid mixture of at least one hydrolysed cereal product with a specific glucose content and pH. A bakery composition for adding carbohydrate-based sweeteners used to replace fat and act as a fat carrier in a fat-reducing system is used in cakes prepared using baking powder, e.g. sponge cakes or soft gingerbread cakes. The composition comprises a pumpable liquid mixture of at least one hydrolysed cereal product containing ca. 30-45 wt.% glucose and having a pH of 4.5-7, and sugar and/or flour and/or fat. |
