The method of printing text or graphics on iced surface of candy articles, involves the use of a synthetic oil and a silicone-based flexible stamp to transfer quick drying ink from an engraved plate to the surface of the candy item. The process of printing on candies (sweets), to decorate the surface of candies coated with icing sugar, especially candies known under the name Calissons d'Aix-en-Provence, involves using a quick drying ink first of all deposed on metallic plate bearing the concave-engraved motif, in such way that only the engraved part retains the ink which is further transferred onto the surface of candy by means of silicone-based flexible stamp. The ink volatility and the quality of silicone used to make the stamp are selected in such way as to ensure perfect print with no risk of damage to the fragile surface of candy. The stamp consists of a mobile support bearing a fixed element of ink transfer made of material combining silicone and synthetic oil at pre-determined ratio required to obtain the structure presenting no risk of cracking or damaging the surface of the candy. The metallic plate is preferably aluminum coated with pre-sensitized layer permitting concave-engraving of desired design by exposing to UV source, developing in water and drying in oven. An Independent claim is also included for the candy article coated with a layer of icing, especially the candy called Calissons d'Aix-en-Provence, with the icing surface bearing text or graphics printed using the method and ink as claimed.
