A barbecue sausage is prepared as an elongated string (1a, 1b) of protein mass, beef or pork sausage meat (2) . The sausage is especially without a discrete conventional sausage skin, and deep-frozen or shock frozen. The string if sausages is formed as a spiral or helix, with adjacent turns linked by the freezing action. The diameter of the sausage is in the range 0.1 - 20 cm. Modification of the sausage meat surface layer forms a skin (3). An Independent claim is included for a sausage-making assembly which is electrically or electronically controlled. |
