摘要 PROBLEM TO BE SOLVED: To obtain a flour food by using modified flour having strong properties prepared by modifying gluten in flour by formulating flour of weak gluten with a fixed amount of extremely strong flour. SOLUTION: This modified flour comprises >=1 wt.% of extremely strong flour. The extremely strong flour is flour having a mixing hour of 1.2 times as long as that of flour for bread on the market. Domestically produced flour not sufficient in qualities as strong flour is formulated with >=1%, more preferably >=5% of the extremely strong flour and the properties of gluten of the domestically produced flour are modified to give the objective high-quality modified strong flour. This flour food is produced by using the high-quality modified strong flour.
