PROCESS FOR PREPARING HOT PEPPER PASTE CONTAINING OAK MUSHROOM COMPONENT

PURPOSE: A process for a hot pepper paste included an oak mushroom powder removed moisture and smell is provided. CONSTITUTION: A process is characterized by including 3-9pts.wt. of an oak mushroom powder which is removed moisture and flavor by roasting dried oak mushroom for 20 min. in the middle flame, 17-25pts.wt.of glutinous rice, 19-24pts.wt. of a hot pepper powder, 10-12pts.wt. of fermented soybean powder, 11-23pts.wt. of salt, 3-12pts.wt. of a malt and 30-32pts.wt of water.
