摘要 PURPOSE: Provided is a composition for maintaining quality of rice and preparation thereof, which has excellent disinfection effect and fungicide action, and can maintain freshness of rice for a long time by using anionic water. CONSTITUTION: The composition contains 50wt% of garlic powder, 10wt% of pepper powder, 10wt% of starch, 7wt% of horseradish powder, 3wt% of mustard powder and 20wt% of anionic water. The composition is obtained by the steps of: i) kneading the garlic powder, pepper powder, starch, horseradish powder, mustard powder and anionic water by hands; ii) kneading again the kneading by a kneader; iii) making the kneading of form of round noodle; iv) cutting the noodle into a circle; and then v) drying it in a dryer.
