Esterified polyoxyalkylene block copolymers which are useful as reduced calorie fat substitutes in food compositions due to their resistance to enzymatic hydrolysis and absorption upon ingestion have the structure <CHEM> wherein A is an initiator moiety derived from an active hydrogen-containing initiator having at least 1 active hydrogen, IB is a hydrophilic polyoxyalkylene inner block having a carbon DIVIDED oxygen molar ratio of less than 2.5, OB is a lipophilic polyoxyalkylene outer block having an ester linkage to <CHEM> which is substantially resistant to hydrolysis upon ingestion and having a carbon DIVIDED oxygen molar ratio of greater than 2.5, R is a C7-C23 hydrocarbon moiety, and z corresponds to the number of active hydrogens on the active hydrogen-containing initiator. The hydrophilic polyoxyalkylene inner blocks tend to promote thickening or gelling of the composition when mixed with a minor amount of water, thereby lessening problems with anal leakage and short bowel transit times. |
