PROBLEM TO BE SOLVED: To provide a method for surface treatment of root vegetables, which keeps their surfaces fine and dampish, and high-quality conditions, by coating their surfaces with a protective film containing a deliquescent material. SOLUTION: This method is for surface treatment of root vegetables, e.g. sweet potato and carrot, coating their surfaces with a protective film containing a deliquescent material by immersing them in an aqueous solution of hydroxide of alkali metal, chloride or nitrate of Mg or Ca, chloride or nitrate of Al, Mn, Fe, Co, Ni or the like, perchlorate, or the like, and then drying them. Concentration of the aqueous solution to be spread over the vegetable surfaces is preferably 0.1 to 5 wt.%, more preferably 0.5 to 3 wt.%. |
