PROBLEM TO BE SOLVED: To obtain a new gel-like composition having property as an elastomer which is tough to strong impart, being weak gel which is made to flow by own weight when allowed to stand for a long time and useful for foods, etc., by incorporating polysaccharide produced by a lactic acid bacterium and a trivalent metal therein. SOLUTION: This gel-like composition comprises lactic acid bacterium- produced polysaccharide produced by Streptococcus lactis, Lactococcus lactis, Streptococcus cremoris or Lactococcus cremoris which is a lactic acid bacterium producing capsular viscous material and represented by the formula and having phosphoric acid group at the side chain and a trivalent metal such as aluminum, chromium, iron, cobalt or nickel. Further, the gel-like composition is obtained by directly adding and mixing polysaccharide solution with a trivalent metal salt solution. |
