发明名称 EMULSIFYING AGENT COMPOSITION
摘要 PROBLEM TO BE SOLVED: To obtain an emulsifying agent composition readily soluble in water and suitable for adding to transparent or translucent liquid food and beverage without causing turbidity or precipitation by incorporating an antimicrobial emulsifying agent, a polyglycerol fatty acid ester and an organic acid glyceride therein. SOLUTION: This emulsifying agent composition is obtained by compounding (A) 1 pt.wt. antimicrobial emulsifying agent such as saccharide fatty acid ester having >=80% monoester ratio with (B) preferably 0.1-3 pts.wt. polyglycerol fatty acid ester such as polyglycerol stearate and (C) preferably 0.01-1 pt.wt. organic acid monoglyceride such as diacetyl tartaric acid monoglyceride. Further, in the emulsifying agent composition, clouding point in 20 wt.% NaCl aqueous solution of polyglycerol stearic acid ester is preferably <=50 deg.C. When a liquid food or beverage such as transparent or translucent food or beverage is prepared by using the emulsifying agent composition, the concentration of the component A in the liquid food or beverage is preferably 1-300 ppm.
