PROBLEM TO BE SOLVED: To provide a process for producing diglycerol having high purity by using glycerol ketal or acetal as a raw material. SOLUTION: This process for the production of diglycerol contains a step to produce diglycerol ketal or acetal expressed by formula III (R1, R2, R3 and R4 are each same or different hydrogen atom or a hydrocarbon group; when R1 and R2 or R3 and R4 are each hydrocarbon group, R1 and R2 or R3 and R4 may together form a carbon ring) by reacting a glycerol ketal or acetal compound with sulfuric acid ester salt of glycerol ketal or acetal and a step to obtain the diglycerol by removing ketal or acetal from the diglycerol ketal or acetal.
