摘要 PROBLEM TO BE SOLVED: To provide a new β-fructofranosidase gene coding for a protein composed of a specific amino acid sequence, having bifidus bacteria proliferation activity and enabling the efficient production of a synthetic enzyme of a fructosyl invert sugar such as lactosucrose useful as a new sweetener. SOLUTION: This new β-fructofranosidase gene codes for a protein composed of the amino acid sequence of the formula, has bifidus bacteria proliferation activity and is useful e.g. for the production of β-fructofranosidase usable for the synthesis of a fructosyl invert sugar such as lactosucrose attracting the attention in a food field and pharmaceutical field e.g. as a new sweetener usable as a substitute for sucrose. The gene can be produced by extracting a DNA from bacteria of the genus Arthrobacter [e.g. Arthrobacter sp. K-1 (FERM BP-3192)], constructing a DNA library from the extracted DNA by conventional method and screening the library with a probe having a partial gene sequence composed of a PCR product.
