摘要 PROBLEM TO BE SOLVED: To provide an odor sensor capable of detecting with high sensitivity an odorous substance having a certain width by using an odor binding protein. SOLUTION: This odor sensor 10 is provided with a substrate 16, and an electrolyte layer 13 covering the substrate 16 and having dielectric property. Also, an odor binding protein 12 is fixed on the substrate 16 and this odor binding protein 12 is positioned at a boundary surface 15 between the substrate 16 and the electrolyte layer 13. Consequently, when an odorous substance 11 is adsorbed to the odor binding protein 12, a refractive index of this boundary surface 15 changes and the odorous substance 11 is detected on the basis of this change. A bovine derived odor binding protein is used as the odor binding protein 12, and because this protein has affinity with various types such as terpenoid, esters, aldehydes, aromatic compounds and the like, it is possible to specifically detect a wide variety of odorous substances such as these. Also, it is possible to measure the change of the refractive index as changes relating to this, for example, a change in the resonance angle, a change in the interference effect, or a change in the permittivity.
