VEGETABLE STEROL-CONTAINING FAT COMPOSITIONS AND PROCESS FOR PRODUCING THE SAME

Vegetable sterol-containing fat compositions which contain: (A) vegetable sterol fatty acid esters; and (B) from 10 to 70 % by weight of partial glycerides. The compositions can impart an effect of regulating the absorption of cholesterol. When these compositions are used in producing fat foods of emulsion type (margarines, fat spreads, whipped creams, etc.), it is possible to use no emulsifier or to reduce the amount of emulsifiers, thereby giving emulsion products having no or relieved smell characteristic to emulsifiers.
