In a process and assembly to pasteurise mother's milk for human especially premature-born babies, the milk is taken from the mother and placed in a vessel (16) in which it is heated for a short period to above 70 degrees C, followed by rapid cooling to pref. 38 to 40 degrees C. The milk temperature is monitored at all times. The bottle is rotated during treatment at approx. 300 rpm, fforming a thin film on the container inner wall. The heating is undertaken within a ot bath, and the cooling is effected within a cool bath.
