The invention relates to a method for crystallizing an aqueous solution. According to the invention, said method consists in the following steps: at least one surfactant is initially added to the aqueous solution if the aqueous solution does not at least already contain one natural surfactant; the volume of the medium is subsequently swollen to form foam, whereupon crystallization occurs in a structured medium in the form of foam and said structured medium is used as a provisional material support for crystals undergoing a process of formation, after which the crystals or agglomerates of crystals are recovered by destructuring said foam.
