Disclosed is a composition of matter comprising a defined dispersion of isolated lactoferrin immobilized on a naturally occurring substrate via the N-terminus region of the lactoferrin; and at least one pharmaceutically acceptable carrier. The inventive pharmaceutically acceptable compositions, containing immobilized lactoferrin (<i>Im</i>-LF), are formulated in a wide variety of embodiments, including cosmetics, cleansers, food supplements, or medicaments, and for numerous useful delivery systems. Compositions comprising <i>Im</i>-LF are used in methods of preventing or inhibiting the growth and/or adhesion of a microbe in or on a vertebrate subject, and on a biological surface, such as a cellular, mucosal, epithelial, or eggshell surface, or in a biological fluid, such as semen, blood, or a culture medium.
