The invention relates to a slotted knife for peeling vegetables and fruit, applicable to peeling or removing the non-edible layers of vegetables and fruit. According to the invention, the knife comprises a cutting blade (1) rigidly fixed inside a handle (2) at one end and a conical tip (a) at the other end, said tip having an apex angle (gama) of 35°. The cutting blade (1) has a 3 cm long slot (d) at a distance of 1.4 cm from the conical tip (a), said slot being bordered by two platelets (3, 4) inclined at angles (alpha and beta) of 15° and 22°, respectively, and sharpened parallely to the direction of blade (1).
