PROBLEM TO BE SOLVED: To obtain a soybean protein material, such as concentrated soybean protein, defatted soybean milk, acid-precipitated soybean protein or bean curd refuse, giving excellent flavor, excellent color, excellent smell, excellent transparency, and so on, when used for confectionery, desserts, and the like. SOLUTION: This soybean protein is obtained by treating low denaturated defatted soybeans subjected to a defatting treatment using an organic solvent with a low concentration alcohol aqueous solution having an alcohol concentration of 60 to 85 vol.% at a temperature of <40 deg.C, replacing the low concentration alcohol aqueous solution containing the low concentration alcohol aqueous solution-treated soybeans with a high concentration alcohol aqueous solution having an alcohol concentration of >88 vol.%, treating the soybeans at a temperature of <40 deg.C until the final alcohol concentration reaches >=88 vol.%, subjecting the high concentration alcohol aqueous solution-treated soybeans to an alcohol-removing treatment, and then separating the soybean protein from the concentrated soybean protein.
