A method of controlling food extruders for producing direct puff snacks using corn, rice, and beans as a raw material, and a control system. This cooking control system (1) comprises a raw material feeding means (2), a water-adding means (3), a processing means (4) consisting of an extruder, and a control computer (5). During the production of quality snacks, the control computer (5) calculates specific power consumption, which is used as a reference value, from power consumption and the amount of dough supplied, and compares the specific power consumption reference value with the actual specific power consumption. If the difference is small, the rpm of the extruder is controlled, while if it is large, besides rpm control, the rate of addition of water and the rate of feed of raw material are controlled, so as to ensure a stabilized quality. |
