<p>There is provided a protein disulfide isomerase variant having increased reducing properties as compared to the wild-type protein and capable of being expressed extracellularly in a high yield. The present invention relates to polypeptides capable of reducing disulfide bonds, including variants of protein disulfide isomerase, the variants having a decreased redox potential. The invention also relates to nucleotide sequences encoding the polypeptides, as well as nucleic acid constructs, vectors, and host cells comprising the nucleotide sequences. Further, the invention relates to methods for producing and using the polypeptides, including use of the polypeptides for reducing the allergenicity of allergenic proteins, e.g. in feed or food or cosmetic products. The invention also relates to food additives or cosmetic products comprising a polypeptide of the invention.</p> |
