<p>A carotenoid-containing plant extract in the form of a lipid-protein complex particularly enriched in carotenoids and other anti-oxidants and process for preparing it, wherein a crushed carotenoid-containing plant material is incubated, then a juice recovered after separation of plant solids is subjected to a heat treatment, a precipitate is then recovered from the heated liquid phase after a second separation to obtain a coloured sludge extract.</p> |
