An edible composition, such as particulate sweeteners, chocolate, hard sweets, chewing gum or compressed tablets, comprises amorphous solid trehalose and at least one substance having an endothermic heat of solution. The amorphous trehalose has an exothermic heat of solution, preferably of at least +30 kJ/kg in water at 25{C, which can counteract the cooling effects of the other components having an endothermic heat of solution. The endothermic substance(s) may be a soluble pharmaceutical, a pharmaceutically acceptable excipient, a foodstuff, a flavouring or a dietary supplement and is preferably crystalline and anhydrous (except for water of crystallisation). Preferably, the endothermic substance(s) is a sweetener, such as dextrose monohydrate, crystalline trehalose dihydrate or a sugar alcohol, such as mannitol, sorbitol, xylitol, maltitol, isomalt, lactitol or erythritol. Preferably, the endothermic substance(s) constitutes at least 10% of the composition, has a solubility in water at 25{C of at least 25 g/litre and has a heat of solution in water at 25{C more endothermic than -30 kJ/kg. Preferably, the composition comprises less than 20% by weight of water, at least 5 % of the amorphous trehalose and the weight ratio of the endothermic substance(s) to trehalose is between 1:10 to 3:1. The heat of solution of the composition is less endothermic than -50 kJ/kg. |
