juice production technology. SUBSTANCE: citrus fruits are extracted with nonpolar liquefied gas for removal of bitter substances. Dry biomass of MORTIERELLA POLYCEPHALA microorganisms is extracted with nonpolar liquefied gas. Micelle is separated and directed for impregnation of extracted fruits. Impregnation is carried out at pressure above atmospheric for 2-5 h. Then, pressure is released at rate to ensure freezing of fruits. EFFECT: higher resistance of juice to microbial damage. 1 ex
