摘要 juice production technology. SUBSTANCE: citrus fruits are extracted with nonpolar liquefied gas for removal of bitter matter. Dry biomass of MORTIERELLA HYGROPHILA microorganisms is extracted with nonpolar liquefied gas. Micelle is separated and directed for impregnation of extracted fruits. Impregnation is effected at pressure above atmospheric one for 2-5 h. Then, pressure is released to atmospheric at rate to ensure freezing of fruits.
