PURPOSE: A processing method of nuts having sugar syrup coating and frying is provided to evenly permeate the syrup into the nuts by removing moisture of the nuts with a roasting process before the coating, by mixing the nuts with the syrup in the sugar syrup coating process and by reheating it. CONSTITUTION: A processing method of nuts having sugar syrup coating and frying comprises the steps of: (i) roasting to remove moisture of the nuts under heating it at 155-175°C for 5-60 minutes by direct or indirect heating in a drum or a fan; (ii) mixing the moisture removed nuts and the sugar syrup having the temperature of 100-120°C, and reheating the mixture up to 100-120°C; and (iii) frying the nuts coated with the sugar syrup in frying oil of 150-170°C for 1-10 minutes. One or more of nuts for the process are selected from peanut, almond, cashewnut, hazel, walnut, coconut and pistachio. The sugar syrup contains 50-70 wt.% of sugar and 30-50 wt.% of water, and is heated at 100-120°C to be the viscosity of 60-80 brix. The frying oil is using one from shortening, corn oil, soybean oil or palm oil.
