PURPOSE: Provided are a washing device and an air handling unit of a yeast producing machine, to automatically wash the inside of the machine and to produce yeast of uniform quality by maintaining internal temperature and humidity of the machine equally. CONSTITUTION: The yeast producing machine with a grain inlet device(2) reciprocated on a yeast producing plate(8) and a mixing device(3) includes an air handling unit(10) supplying air through a blower(13) and an air supply duct(14) to at least three or more supply ports(15) installed at a lower part of the yeast producing plate, at least three or more of exhaust ports(12) connected to a suction duct(11) at a top part of the yeast producing plate for exhausting the air, a U-shaped washing pipe having a plurality of nozzle formed on the pipe to be facing the wall and the ceiling that is connected to a connecting pipe, and a washing device with a transfer device at the one side that is reciprocated for washing inside the machine.
